Roasted Garlic Cauliflower Dip
Ingredients:
-1 head of garlic
-1/2 tsp coconut oil
-1 head of cauliflower, steamed
-1/2 cup extra virgin olive oil
-Juice of 1 lemon
-2 Tbsp water
-1/2 tsp sea salt
Directions: Preheat oven to 400F. Cut off the very tip of the garlic head, making sure every clove is exposed. Place coconut oil on top and cover with foil. Roast the garlic for 30 minutes until soft and slightly browned. Remove from oven and remove the cloves. Place cloves in food processor with all other ingredients. Process until a thick puree forms. Serve with grain-free flatbread.
