Mexican Cauliflower Rice

Ingredients
12 oz riced cauliflower pre-made (or about 1 head riced- nearly 4 cups)
1 Tbsp ghee + 1 Tbsp coconut oil for cooking fat
¾ tsp fine grain sea salt
¼ tsp black pepper
1 tsp cumin
1 tsp chili powder
1 red bell pepper, diced
1 small yellow or white onion, diced
3 garlic cloves minced
1 can diced green chilis, drained
1 jalapeno pepper, seeded and minced
Cilantro for garnish
Instructions
Heat cooking fat in a large skillet over low-medium heat. Add onion, garlic, chili powder, cumin, salt, and black pepper. Saute for 6-8 minutes. Add red pepper, jalapeno, and green chilis. Continue to cook until soft. Add cauli rice and stir to coat, then cover skillet for 30 seconds to soften cauliflower. Uncover and remove from heat.
